Description
This is the chocolate that is used on our Extra Dark Chocolate toffee. It’s a little more intense than the 65% Costa Esmeraldas chocolate. These cocoa beans are beautifully balanced. The chocolate flavors and stronger and the fruit notes are a little more subtle in the latest Costa Esmeraldas harvest than in the past couple of years.
We buy these wonderful cocoa beans from the Salazar family, who grow them at Costa Esmeraldas, their family-owned 100-hectare cacao farm close to the coast in the rural Province of Esmeraldas in Northern Ecuador, a non-traditional cacao growing area. The beans are grown without herbicides or pesticides, and Costa Esmeraldas is pursuing organic certification.
