The unique soil and climate of Tanzania produces a bright, fruity cacao that reminds one of red berries, fruit, and citrus. At Maybird, we craft this chocolate to emphasize these bright and snappy flavors, roasting the beans lighter to preserve their brightness, allowing the heat to break down some, but not all, of the acids present from fermentation. The result is a fantastic single-origin dark chocolate that gives the same characteristics we love about East African coffees from Tanzania, Ethiopia, and Kenya — sweet, bright, and fruity; the perfect summer chocolate.
About Kokoa Kamili
Nestled in the foothills of the Kilombero Valley, a lowland overlooked by the lush Udzungwa Mountains, a small village called Mbingu is home to Kokoa Kamili, one of the world’s finest cacao producers. Kokoa Kamili operates as a central fermentary that buys organic cacao above market prices from small family farms in the surrounding region. To empower farmers with the knowledge and means to grow the highest quality cacao while increasing yields, Kokoa Kamili provides agronomy education and below-cost seedlings to farmers in the region. By buying higher quality organic beans directly from farmers and controlling the difficult fermentation process themselves, a task that requires a large minimum amount of beans to reliably control, Kokoa Kamili has become a champion of sustainable cacao production, social equity, and economic mobility for the community.
By empowering farmers with resources and education, the fermentary’s hard work has paid off with some of the best tasting chocolate available.

Packaging Disclosure: Due to the small batches in which these chocolates are made, we wrap these bars in handmade papers from around the world that we hand cut at our shop. Though we follow a general color scheme for each origin, the bar you receive may be wrapped in a different type of paper than what is pictured on our website due to the limited quantities we can buy of each type of paper. What you receive should never be less beautiful, but it may be different.
Shipping Disclosure: In the summer months, chocolate can melt very quickly in the mail during hotter days. We pack orders in insulated bags and include ice packs, but for orders that need to travel outside of Georgia, it may be necessary for us to wait to ship your order until temperatures drop. We do this to ensure you receive our product as we intended, with beautifully tempered chocolate. If you do ever receive your order and find that the chocolate has melted and has changed in appearance or texture, know that it is still perfectly edible, but please do not hesitate to reach out to us and we will be happy to do what we can to make it right.
