Costa Esmeraldas Dark Chocolate 65%

Description

This is the chocolate that we consider the “house chocolate” at Maybird. There’s a good reason that this is what we use on our Dark Chocolate toffees and so many other chocolate confections. These cocoa beans are beautifully balanced. The chocolate flavors and stronger and the fruity notes are a little more subtle in the latest Costa Esmeraldas harvest than in the past couple of years.

We buy these wonderful cocoa beans from the Salazar family, who grow them at Costa Esmeraldas, their family-owned 100-hectare cacao farm close to the coast in the rural Province of Esmeraldas in Northern Ecuador, a non-traditional cacao growing area. The beans are grown without herbicides or pesticides, and Costa Esmeraldas is pursuing organic certification.
